Ein Rezept, dass ich aus dem Internet und dem Germteig von der Petra kombiniert habe:

Zutaten

Teig:

  • 500g glattes Mehl
  • 75g Zucker
  • Prise Salz
  • 1/2 Würfel frische Hefe
  • 250ml lauwarme Milch
  • 75g weiche Butter
  • 1 Ei Mohnfülle:
  • 250 ml Milch
  • 250 g geriebener Mohn
  • 1 EL Semmelbrösel
  • 100 g Zucker Topfenfülle:
  • 60 g weiche Butter
  • 180 g Zucker
  • 500 g Topfen
  • 2 Eier
  • 1 EL Speisestärke
  • 1 EL Rum Zusätzlich:
  • 1 Eigelb
  • Powidl
  • Mandelsplitter

    Zubereitung

    Zunächst den Germteig zubereiten. Dazu das Mehl in eine große Schüssel sieben, salzen und die Butter hineinwürfeln. Die Milch erwärmen (lauwarm, nicht heiß), den Zucker hineinstreuen und den Germ hineinbröseln. Verrühren bis der Germ sich aufgelöst hat und dann das Ei darunterquirln. Über das Mehl gießen und zu einem elastischen Teig kneten, der nicht mehr an der Schüsselwand kleben bleibt. Mit einem feuchten Küchentuch abdecken und an einem warmen Ort aufgehen lassen. Jetzt hat man Zeit die Füllungen zuzubereiten. Für die Mohnfüllung muss man einfach nur alles gut mischen. Wenn man will kann man auch Rosinen hineintun. Die Topfenfülle ist schon schwieriger. Zuerst das Eiweiß steif schlagen. Dann den Zucker und die Butter mit dem Mixer gut verrühren (sonst hat man später Butterbröckerln in der Masse!), dann Ei, Topfen, Rum und Stärke unterrühren. Den Eischnee unterheben. Jetzt sollte der Germteig auch schon aufgegangen sein. Zu einer langen Rolle formen und ca. 50g schwere Stücke abschneiden. Die muss man dann wie eine Pizza zu kleinen Scheiben mit Rand formen und auf ein mit Backpapier belegtes Blech legen. Dann lasst man sie noch ein bisschen an einem warmen Ort stehen, die gehen nochmal ein bisschen auf. Nach 5 Minuten den Rand mit dem Eigelb bestreichen und mit einem Teelöffel drei oder vier Batzen Mohn auf jede Kolatsch geben. Danach mit einem Spritzsack die Topfenmasse dazwischenspritzen. In die Mitte kommt ein Teelöffel Powidl. Mit Mandeln bestreuen und im vorgeheizten Backrohr bei 200°C ca. 20 Minuten backen, bis sie schön braun sind.     Ingredients

    Dough:

  • 2 cups flour
  • 1/4 cup sugar
  • a bit of salt
  • 1/2 dice of fresh yeast (here they sell yeast in dices of 42g, so you need 21 g for this recipe which is aprox 0.7 ounces)
  • 1 cup handwarm milk
  • 2.5 oz soft butter
  • 1 egg Poppy seed filling:
  • 1 cup of milk
  • 1 cup of grinded poppy seeds
  • 1 tablespoon breadcrumbs
  • 3.5 oz sugar Curd Cheese Filling:
  • 2.1 oz soft butter
  • 6.3 oz sugar
  • 2 cups curd cheese
  • 2 eggs
  • 1 tblspn starch flour
  • 1 tblspn rum Additionally:
  • 1 egg yolk
  • dark plum jam (this is actually a special plum jam which is overcooked while producing it. It tastes stronger and is brown colored not blueish)

    Preparation

    First we make the dough. Sieve the flour into a big bowl, put a bit of salt in and dice the butter and put it on top. Warm up the milk (hand warm, not hot!), put the sugar inside the milk and then crumble the yeast into the sweet milk. Stir until the yeast is mostly gone - little bubbles should be forming on top of the milk. Stir the egg into the milk-yeast mixture and then pour it over the flour. Knead the dough by hand until its elastic and doesn’t stick to the bowl anymore (takes 5 minutes max). Cover the bowl with a wet kitchen towel (so that the dough won’t get dry on top) and put the bowl on a warm place. In summer I put it somewhere in the sun behind a window and in winter I put it over the heating. It will double its size after some time. Now we have time to make the fillings. For the poppy seed filling you just have to mix all the ingredients. If you like you can put a handful of raisins inside. The curd cheese filling is a bit more complicated. First you need to whisk the egg whites stiff. Put them aside and take a new bowl. Mix the sugar and the butter with a hand mixer (otherwise you will have pieces of butter in the filling in the end!). Now add the egg, curd cheese, rum and starch and mix well. Carefully stir the beaten egg whites into the mass. Now the dough should be fine. Form a long roll out of it and cut it into pieces of aprox. 1.75 oz. Then form them like little pizzas - in the middle flat with a bit of a border around. Put them on a sheeted baking tray and let them sit in a warm place for 5 more mins - they should grow a bit more. Then coat the rims with an egg yolk. Put three or four teaspoon sized lumps of poppy seed filling onto the kolaches. Then Fill a icing bag (piping bag?) with the curd cheese filling and put lines in between the poppy seed lumps. Finally put one teaspoon of plum jam into the middle and season with almond slivers. Bake in the preheated oven at 200°C (equals 392°F) for 20 minutes until they are nice and brown.
